Have I ever told you just how much I love breakfast? Seriously. I eat dinner and get depressed because breakfast is my next meal and it is so far away (hi... I'm a fat kid at heart). It is, hands down, my favorite meal. However, given current (dietary) circumstances, my joy has been slightly robbed.
I miss pancakes (real pancakes) with peanut butter and bananas on them. I miss doughnuts! I miss muffins and pastries, I miss waffles, I miss cereal and REAL EGGS (I am only allowed egg whites, which, though better for my heart, is killing me with sadness) don't even get me started on my love of bacon and hash browns... you guys my mouth is watering so I will stop.
You may be thinking... what else is there to eat for breakfast? And to be honest, I had much the same feeling. BUT, when push comes to shove you get crafty and make up tasty treats that won't obliterate your organs (though in a moment of weakness I did almost eat pancakes the other day). Lately, my solution is- scrambled eggs whites cooked in coconut oil, roasted kale or asparagus, and quinoa (occasionally brown rice cereal... though I'm not allowed to have it all that often, I am obsessed with it!). Some days I go for Avocado... and somedays I cry because ALL I want is that avocado on toast!
The thing is, I enjoy these breakfast the more I have them. If you had told my 12 year old self that I would be eating KALE for breakfast she would have laughed in your face (after asking you what the hell Kale is, lord knows I was clueless [I lived on a diet of frozen waffles and poptarts]). Though I may miss all of the things that make breakfast (truly) exciting, I am learning to love my limitations and the creativity they have forced me to have in the kitchen.
