I love breakfast… better yet brunch. But if we are being fair, brunch is just breakfast dressed up as lunch, which I am perfectly ok with. In honor of that reality I concocted a farm fresh breakfast pizza that is savory and delicious.
What you will need:
1 pizza crust, pre baked until slightly done (I used Pamelas Gluten Free Pizza Mix )
1/2 lb chorizo, browned
4 organic eggs
1 small shallot
1/2 cup finely chopped sheep cheese
1/4 cup goat cheese crumbles
2 tsp olive oil
fresh chopped chives
salt and pepper to taste
Brown the chorizo in a larger skillet, add in the shallots until they become slightly translucent. Drizzle the pizza crust with olive oil and sprinkle with salt and pepper. Generously sprinkle with cheese and the chorizo mixture. Crack the eggs directly onto the toppings. Bake at 350 degrees for 10-12 minutes (until the eggs are cooked to your liking and the cheese is melted).
Allow to cool slightly and devour.
This dish is amazing with bacon and avocado as well or do fresh mozzarella and tomatos for a veggie friendly version. Any way you make it, it is sure to please!
