If there is any 'national day of (insert generally mundane item here)' that I actually enjoy, it is PANCAKE DAY! I am the girl who had a build your own pancake bar for dessert at her wedding after all.
To all of you who can take part in IHOPS free pancake celebration I say, go! eat, drink shitty coffee, and regret nothing!... though you may contemplate death after just 2 flap jacks the size of your face, YOLO right?
For those of us who aren't so lucky... those who have more 'choosy' stomachs will simply have to celebrate at home. That doesn't mean our celebration should be sad or boring! The opposite in fact. We will make twirly pancakes and celebrate the day away.
-ZUCCHINI BREAD PANCAKES-
What you will need:
1 medium zucchini finely chopped
2 tsp vanilla
3 tsp cinnamon
1 tsp nutmeg
1/4 tsp sea salt
1 tsp baking soda
3/4-1 cup coconut flour
3/4-1 cup unsweetened milk of choice (I used Hemp)
2 tbsp ground flax+1/2 cup water+1/2 cup egg whites (or one whole egg)
1/3 cup coconut oil melted
2-3 tbsp raw honey
In a bowl, mix coconut flour, baking soda, salt, nutmeg and cinnamon until smooth. Add in the zucchini, flax+egg mixture, milk, oil, vanilla, and honey. Stirring well. The batter will be fairly "fluffy" for lack of a better word, if it is too thick however, add in a little water to thin it down.
Preheat your griddle to 350, smear with butter or coconut oil (not needed I just like it for flavor). Place 1/4 cup globs of your batter onto the griddle and press gently until they are thinned out (roughly 1/4-1/2 inch thick). Allow to cook for 2 minutes and then flip, they may break apart a little, press back together with your spatula. Continue the flipping every 2-3 minutes until cooked through (shouldn't be more than once or twice).
Spread butter or butter alternative over the top and drizzle with honey or syrup if so desired (honesty, they are just sweet enough in my opinion, but I won't hate if you drown them in a pool of sugar filled bliss).
These guys were a quick fix to a pancake craving, the recipe needs a little work, but they are so tasty I had to share them... I mean, it seemed only right.
