Today, Memorial Day, is a day of remembrance, a day of honoring. And so, I will keep this short (and ever so sweet).
I have always had a ‘thing’ for peanut butter. Ever since I can remember, there was something comforting about it. Reaching into the pantry, wrapping my small, eager, fingers around the oversized JIFF jar, sitting on the floor in the kitchen licking the peanut butter off a spoon. You can still find me in my kitchen, standing next to the refrigerator, with a jar of all natural peanut butter in one hand and a spoon in the other… listen, I’m not proud of it, but it really is the best thing.
-PEANUT BUTTER COOKIES-
What you will need-
1 large egg
3/4 cup sugar
1 tsp baking soda
1 cup all natural peanut butter
1/2 tsp vanilla
powdered sugar for dusting
In a medium sized bowl, cream together the egg, sugar, and baking soda until smooth, add in the vanilla and peanut butter. Stir until the batter cleans the edges of the bowl. Place TBSP sized balls of dough onto a greased baking sheet or baking mat, use a fork to press the cookies down, creating a “plus” sign across the top.
Bake at 350 degrees for 10 minutes. Allow to cool for 3-5 minutes before removing the cookies from the baking sheet.
Sprinkle with powdered sugar and enjoy.
These decadent treats may indeed be gluten free, but I promise you, you would never know. The first chewy, peanut butter filled bite is sure to take you back. Flooding your senses with moments past.
