You guys... there is Christmas stuff in Target. There are Christmas lights being hung in my neighborhood... THERE IS CHRISTMAS MUSIC ON THE RADIO! I mean, part of me loves it, but also, isn't it a touch too soon? Call me old fashioned but Christmas decor goes up after Thanksgiving not Halloween (though I'm apparently in the minority with that thought).
At any rate, I have started working on recipe ideas for the holidays... seeing as how my extended family always tries to force traditional dishes on me, I figured the best defense is offense... (or some other sports themed metaphor my father would use). That is to say, if I bring my own pie, they can't get offended when I don't eat theirs, capiche?
-(PALEO) PUMPKIN PIE-
What you will need for the crust:
1 cup raw sunflower seeds (ground into an almond flour like texture)
1/2 cup coconut flour
pinch sea salt
1/3 cup coconut oil
1 tsp honey (optional)
Mix together, press into 9x9 or pie pan and pre-bake at 350 degrees for 10-12 minutes, until lightly golden brown. While your crust is baking, prepare the filling... then remove the curst from the oven and allow to cool.
What you will need for the filling:
1 14oz package of pumpkin (not pumpkin pie filling)
3-4 egg large whiles (or 2 full eggs) lightly beaten
1/2 cup full fat unsweetened coconut milk
2.5 tsp cinnamon
1/2 tsp all spice
1/4 tsp ginger
1/4 tsp nutmeg
1/2 cup raw honey
1 tbsp mct or coconut oil
Mix all the filling ingredients together and chill for 10 minutes while the crust cools. Pour the filling onto the crust and bake at 350 degrees for 40-45 minutes until edges are lightly browned and the center of the pie is set (toothpick comes out clean, you know the drill).
I won't lie to you, this is not your grandmas traditional pumpkin pie... mostly because the crust isn't processed white flour and a grip ass of butter. However, this pie is super tasty and will absolutely do the trick to get you through the holiday season unscathed (if you have dietary issues like me that is).
