Sometimes you just need a little something sweet...you know what I mean?! After dinner there is that moment when you are perfectly content BUT you just want a little...something.
Given that I wasn't allowed to have sugar for forever this was rather difficult, however, these days I have been a really big fan of the simple sweets like fresh fruit (which at this point blows me away by how sweet it is naturally). The fruit on its own is amazing and we could just, you know, be good and eat it as is... but also we could eat it with a little grain free brownie and coconut whip cream when we are feeling twirly of course.
-DARK BROWN BROWNIES-
What you will need:
15-18 dates (smashed until smooth, you can also puree the in a high powered blender)
1/2 cup sun butter
1/4 cup coconut oil (melted)
2 tsp vanilla
1/4 tsp sea salt
3/4-1 cup cocoa powder
1/4 cup unsweetened milk of your choosing (I used hemp)
2 eggs (or 2/3 cup egg white)
Combine all ingredients until smooth. Press batter into a parchment lined 9x9 baking pan and bake at 350 degrees F for 15-18 minutes (I go with less time because I like them a little soft).
While your brownies are in the oven:
Combine 1 can full fat coconut milk (chilled over night, solid part only), 1-2 tsp vanilla, 2-3 tbsp coconut sugar (sweetened to taste really). Whisk together until fluffy and thick.
Serve with black berries, raspberries, and of course sweet strawberries!
The bitter dark chocolate brownie pairs amazingly with the sweet cream and the bright flavors of the strawberries.
Nature knows whats up when it comes to the simple pleasures in life, that is for sure!
